The facility combined their office headquarters, warehousing of raw materials and packaging, and production facilities with freezers and cool dock. Facility design consultants were in Chicago. The tilt up wall construction aided the fast track requirement for project development. The construction meetings at the site with CGI Desserts (Camelot Desserts) allowed for critical decisions to be made without losing time to typical submittals and approval procedures. The bakery area had a walk on ceiling (50,000 sf) above so maintenance could be performed resulting in continuous production. The facility had many special finishes to comply with food processing. The oven CGI had installed was one of the longest continuous bake types in the industry. They could go from mix to finished product – decorated, packed, and frozen (via cryogenic freezing towers) at the rate of 100 per minute. The building crossed two municipalities City Limits which required working with both cities for permits and inspections resulting in an additional project challenge. However, having had experience building in both jurisdictions allowed the team many advantages, and allowed for successful project completion.
